Katia,

You want to know why do Haitians eat bouillon on Saturday and eat soup on Independence Day (New Year's Day)?

Well, the answer is very simple.

Haitians eat buillon on Saturday and eat soup on Independence Day (New Year's Day) for the same reason Americans eat turkey on Thanksgiving's Day, and fish fry on Fridays.

Have you ever heard of something called "Culture/tradition?" Well, Haitians do have those too.

Bouillon is considered as a light meal which Haitians eat to end the stressful hard work week. On Independence Day (New Year's Day) they eat soup in the memory of the forefathers who shared soup during the Bois-Cayiman ceremony that led to Haiti's independence.
